Egg Timer


 
This is ridiculous post, but I love practical kitchen tools.  I love hard-boiled eggs, but I can never remember how long to boil them for or remember to set the kitchen timer. 

I got the egg timer at Crate and Barrel a few years ago and love it.  You drop it in the boiling water along with the eggs and it changes colors and the eggs become harder.  So, it will also help, if you want soft-boiled eggs.

Almond Bark


I know that I am late to the Almond Bark craze, but better late than never.  I love "sweet and salty" treats.  I saw this blog post The Starnes Family recently and it stuck in my head.  Then the other day, I was in Walmart with my Dad and met a woman in the check out line.  She had the Almond Bark in her cart.  I, of course, couldn't keep my mouth shut and asked her about it.

This kind woman gave me the following recipe:

3 cups Rice Krispies
3 cups Peanut Butter Cap 'n Crunch
1 bag marshmallows
1 can mixed nuts (salted)
1 bag of Almond Bark

Here are the easy steps:
  1. Melt the Almond Bark in a pan; 
  2. Mix the rest of the ingredients together in a bowl;
  3. Pour melted Almond Bark in bowl and stir;
  4. Lay the mix flat in a casserole dish or on cookie sheet to set (about 20-30 min)
  5. Break up the mix and enjoy

I bought a bag of pretzels and took another bag of almond bark and made candy-coated pretzels. Just melt the Almond Bark, pour over pretzels, and let them set.  I had some extra marshmallows, so I added them just to be festive.  Easy and idiot-proof!

Oatmeal and Apples in Turkey Loaf Make This Recipe YUMMY and Full of Fiber!

As fall approaches, we start to eat heavier foods.  This turkey loaf is one of my fall and winter favorites.

One of my favorite recipes, "Loafstyles of the Rich and Famous" is from a great cookbook called Looneyspoons by Janet & Greta Podleski. There are many recipes in this lowfat cookbook that I love. This one is unique, because it incorporates oatmeal and granny smith apples in the recipe. The oatmeal and apples add fiber to the meat dish. The cooked apples and oatmeal do NOT add flavor, just fiber and texture to the meat.

This recipe is guy tested and approved. I swear! Don't be afraid to try it.

Loafstyles of the Rich and Famous:

1 tsp. butter or margarine
2 C chopped, unpeeled Granny Smith apples
3/4 C chopped onions
1-1/2 lbs lean ground turkey (skinless)
1/2 C EACH quick-cooking rolled oats and chopped fresh parsley
1/2 C skim milk
2 egg whites
1 tsp. Dijon mustard
1 clove garlic, minced
3/4 tsp. dried marjoram
1/2 tsp. EACH ground sage, salt and black pepper

Preheat oven to 350 degrees.

Melt butter in a non-stick skillet over medium heat. Add apples and onions. Cook and stir for about 5 minutes, until onions are tender. Let cool.

In a large bowl, mix together apples, onion, and all remaining ingredients.

Spray a 9 X 5-inch loaf pan with non-stick spray. Pat turkey mixture into pan. Bake for 1 hour, or until no longer pink in the center. Pour off any liquid from pan. Invert onto a platter and serve.

Serves 6

Per serving: 198 calories, 3 g. fat, 13.7 carbs, 30.3 g protein, 300 mg sodium, 57 mg cholesterol
